Last month, I shared Part 1 of an eight-part series documenting the Boise food community’s response to COVID-19. Now, Part 2 is out!

For this piece, “Meet Boise’s Food Warriors,” I sat down with the founder of Rolling Tomato. This Boise-based food recovery nonprofit has saved more than nine tons of edible food from Idaho landfills by sharing it with people in need!

During COVID-19, Rolling Tomato’s team of volunteers worked overtime to redistribute food waste from restaurants ranging from Bardenay to Starbucks. Click here to read the full story.
